WINE MAKING
Hand harvested in 15 kg boxes. When finished, grapes are storage in a cold room at about 5°C and vatted next day where a cold prefermentation was carried out. Manual selection grape to grape in selection table after destemming. Vatting by gravity.
Long vatting with gentle pumping over and post-fermentation maceration after completion of alcoholic fermentation. It is aged for 13 months in new French oak barrels and then in the bottle.

Aromas | Mulberry, raspberry and black plum. Memories of violet, spicy touches, nutmeg, clove, black licorice and cocoa. Spicy and mineral notes in retronasal way. |
