Hand harvested in 15 kg boxes. When finished, grapes are storage in a cold room at about 5°C and vatted next day where a cold prefermentation was carried out. Manual selection grape to grape in selection table after destemming. Vatting by gravity.
Pre-fermentative cold maceration, very soft pressing, 24 hours static racking and fermentation with controlled temperature at 16 ºC. Aging on fine lees for a month.
|Color||Straw yellow. Very fine tones, bright and with metallic notes.|
|Nose||Yellow plum, pear, fennel, lemon zest (citrus), memories of white flowers, pineapple, banana.|
|Palate||Fresh with citrus touches, unctuous and long-lasting. Agile in the mouth, vibrant, with tension. Balanced.|
