Hand harvested in 15 kg boxes. When finished, grapes are storage in a cold room at about 5°C and vatted next day where a cold prefermentation was carried out. Manual selection grape to grape in selection table after destemming. Vatting by gravity.
Obtained by bleeding after a few hours of cold maceration, static racking and fermentation with controlled temperature. Aging on fine lees for two months.
|Bright salmon pink.
|Orange peel, ripe, candied fruit and hints of strawberry. Nuts, especially almonds and hazelnuts. Notes of walnut shells.
|Fresh, unctuous and complex. Long and persistent finish.
